Here's your appetizer for the banquet!

HIYAYAKKO

Updates - Page 2 Hiyayakko

It's a chilled tofu appetizer served with toppings. Toppings and seasonings can vary.
Ingredients:

2 blocks silken tofu
for toppings:
katsuobushi (dried bonito flakes)
chopped green onion
grated ginger
for seasoning:
soy sauce
karashi mustard

Preparation:

Cut chilled tofu into halves and serve in individual bowls. Put grated ginger, dried bonito flakes, and chopped green onion on top of tofu as desired. Season with some soy sauce. Put some karashi mustard on tofu if you would like.

Soup Time, Choice 1

SHRIMP AND OCTOPUS SOUP

Ingredients

2 quarts water
2 pounds octopus, cut into 1 inch pieces
1 tablespoon vegetable oil
1 cup diced carrots
1 cup diced celery
2 cups cubed potatoes
1/2 cup crushed dry pasilla chile peppers
1/2 cup chopped onion, or to taste
1 cup diced tomato
1 1/2 pounds large shrimp in shells
1 cup fresh corn kernels (optional)
salt to taste

Directions

Place the water in a large soup pot, and bring to a boil over medium-high heat. Add octopus, and continue boiling for about 20 minutes.
While the octopus is boiling, heat oil in a skillet over medium-high heat. Add carrots, celery, potatoes, and pasilla pepper. Fry for about 15 minutes, adding the onion and tomato at the very end. The ingredients do not need to be fully cooked.
When the octopus has boiled for 20 minutes, add the shrimp in their shells to the octopus, and let it boil for 5 more minutes. Add the vegetables from the skillet, and season with salt to your liking. If corn is used, put it in with the shrimp. Let everything simmer together for 15 minutes.

MISO SOUP

Miso soup is the most popular soup in Japan. Typical Japanese-style meals include a bowl of miso soup. As miso varies in saltiness, adjust the amount of miso to your preference.

Ingredients

3 cups dashi soup stock
1 block tofu
3-4 Tbsps miso paste
1/4 cup chopped green onion

Preparation

Put dashi soup stock in a pan and bring to a boil. Cut tofu into small cubes and add them to the soup. Simmer the tofu for a few minutes on low heat. Scoop out some soup stock from the pan and dissolve miso in it. Gradually return the miso mixture in the soup. Stir the soup gently. Stop the heat and add chopped green onion. Try not to boil the soup after you put miso in.
*Makes 4 servings

Our first Entree:

CHILES EN NOGADA

Ingredients

1 lb. ground pork
1 small onion, chopped
1 clove garlic, minced
1 8 3/4-oz. can sliced peaches, drained
1 medium pear, peeled and cored
1 8-oz. can tomato sauce
1/4 cup raisins
3/4 tsp. salt
1/4 tsp. ground cinnamon
6 large green bell peppers OR poblano chilies

Preparation

In skillet cook pork, onion, and garlic till meat is brown and onion is tender. Drain off fat. Chop peaches and pear; add to meat along with tomato sauce, raisins, salt, and cinnamon. Simmer, uncovered, for 10 minutes.

Meanwhile, cut tops from peppers; remove seeds and veins.Cook in large amount boiling salted water for about 10 minutes or until crisp-tender; drain. Sprinkle insides of peppers with salt. Spoon meat filling into peppers; place in shallow baking dish. Bake in 350 degree oven for 20 minutes or til heated through.Makes 6 servings.

(Nut sauce removed due to the fact that the emperor is allergic to tree nuts)

As long as it's only the tentacles I wouldn't mind the shrimp+octopus soup, but the miso soup looks indeed nicer, which doesn't mean it is. You sure are making this an extraordinary event. I'd say this thread beats anything on the forum so far. It's a great way of showing you care quite a lot about your USNW-involvement.

DORAYAKI

Ingredients

3 eggs
2/3 cup sugar
1/2 tsp baking soda
3 Tbsp water
1 cup flour, sifted
3/4 lb anko (sweet azuki beans)
vegetable oil for frying

Instructions

Put eggs and sugar in a bowl and whisk very well. Dissolve baking soda in water. Add the water in the egg mixture. Add sifted flour in the egg mixture gradually. Heat a skillet or hot plate and lightly oil it. Pour a scoop of the batter into the skillet and make a small pancake. (*about 4 inches in diameter.) Turn over when bubbles appear on the surface. Repeat this process to make 8-10 pancakes. Cool the pancakes. Make pairs of pancakes and put a scoop of anko sweet beans between them.
*Makes 4 or 5 dorayaki cakes...
